Dough
500 g flour
250 g Elle & Vire gourmet butter 82% fat
2 egg yolks
100 ml water
10 g salt
Filling
500 g Avantage cooking 15% fat
3 eggs
salt
pepper
nutmeg
120 g Bleu de Bresse cheese
120 g Sainte Maure cheese
140 g Camembert
140 g Emmental de France Block 28% fat

The recipe,
step by step

    Dough

    Cut the cold butter into cubes and put it in the flour. Mix.

    Knead the dough with the palm of the hand to make it homogeneous. Flatten the dough and refrigerate at least 2 hours before use.

    Roll out the dough with a roller. Line the dough into the mould. Prick the pie crust with a fork.

    Bake in a ventilated oven for about 20 minutes at 170°C (390°F).

    Brush with beaten egg and return to the oven for 2-3 minutes.

    Filling

    Put the different cheeses in the pie shell. Mix eggs and cream in a bowl. Season (salt / pepper / parsley). Pour into pie crust.

    Bake in a ventilated oven for about 20 minutes at 160°C (390°F).
