Recipe Black Sesame & Cream Cheese Box Cake

160 g egg yolks
60 g black sesame paste
40 g oil
90 g milk
120 g T45 flour
1 g bamboo charcoal Powder
320 g Egg white
120 g caster sugar
Sesame cream
200 g French cream cheese
800 g Excellence whipping cream 35% fat
60 g tréhalose powder
60 g icing sugar
100 g black sesame paste
Original cheese cream
50 g French cream cheese
450 g Excellence whipping cream 35% fat
30 g tréhalose powder
30 g icing sugar
Black sesame candy slices
100 g black sesame seeds
40 g honey
4 g oil

The recipe,
step by step

  1. 1

    Black sesame cake

    • Stir the milk, oil and sesame paste until evenly mixed.
    • Sift in the combined charcoal powder and flour continue stirring.
    • Add the egg yolks and mix well.
    • Whisk the egg whites, granulated sugar and egg yolk mixture until evenly mixed.
    • Bake at 180°C for 10-12 minutes.

    Sesame cream

    • Stir all the ingredients and whisk together before using.

    Original cheese cream

    • Stir all the ingredients and whisk together before using.

    Black sesame candy slices

    • Roast the black sesame seeds at 100°C, heat the honey and oil, add the roasted black sesame seeds and stir well.
    • Spread onto baking paper.
    • Bake at 145°C for 18-20 minutes.
    • Let cool before using.
