An exceptional week with Yann Brys in Jakarta

Yann Brys was in Jakarta for two teatimes and an unprecedented demonstration on a spinning scene for the one & only one chef who created the “tourbillon” technique.

From October 2nd to 6th, Best Pastry Craftsman of France Yann Brys was in Jakarta for his first ever time for an exceptional week.

 

First, on Wednesday 4th, the Chef hosted two teatimes at Lewis & Carroll Tea Shop in Jakarta. For those, the Chef presented five pastries to the participants: Chocolate petal, Mango Popcorn Verrines (exclusively created for his visit), Chestnut & Blackcurrant Tourbillon, Stylish Tonka Verrines and Ripple. The shop’s tea master specially paired a delicate & unique tea to each pastry for the participants.

 

Then, on Friday 6th, 130 people attended an exclusive demonstration “Yann Brys will make you head spin”. During this event, the chef presented three recipes:  Chocolate petal, Mango Popcorn Verrines, and Chestnut & Blackcurrant Tourbillon. The audience particularly appreciated the tips and explanations of the Chef for the creation of the pastries as well as the DJ performance between each creation.

 

For each event, the preparations of the recipes were made at Heavenly Sweet School with chefs Priscilla Wignjopranoto from Chicory Jakarta, Edwin Soeryajaya from Ambrogio Bandung and Ivan Wibobo & Rendi Rahmat from Sukanda Djaya.
