Gaspacho
8 tomatoes
1 onion
1 cucumber
1 garlic clove
50 g olive oil
0,5 sweet red pepper
Tabasco®
salt
pepper
Sublime with chives
200 g Sublime, Cream with Mascarpone
20 g olive oil
20 g chives
salt
pepper
Decoration and presentation
chives
120 g garlic croutons
16 cherry tomatoes

The recipe,
step by step

  1. 1

    Gaspacho

    Peel, or peel and seed, the vegetables then blend all the ingredients together. Season.

    Sublime with chives

    Whip the Sublime then add the olive oil and finely chopped chives. Season.

  3. 3

    Decoration and presentation

    Pour the gaspacho into shallow-bottomed serving dishes. Add the garnish and a quenelle of Sublime.
