Scrape the vanilla pod to recover the beans. Heat the butter, and as it begins to brown, add the vanilla beans.
Mix and set aside.
Mix together the sugar, almond powder and flour.
Separately, whisk the egg whites until foamy, then add to the powdered mixture and mix until well incorporated.
Add the honey and the melted butter, and mix again. Place in the refrigerator to rest for 1 hour.
Preheat the oven to 180°C.
Grease the moulds and line with the mixture. Bake for 15 min.
Once baked, remove from moulds and leave to cool on a rack.
Combine the icing sugar and whipping cream, then whisk for 2-3 min on a high setting until firm.
Spread the whipped cream onto the financiers using a spoon.
Place in the refrigerator until ready to serve.
