The TEAM FRANCE Bocuse d’Or organized on Monday, 16th November at the Nespresso Academy in Paris an informal encounter around Laurent Lemal, Bocuse d’Or France 2015 and other numerous partners.

It was a good opportunity for the chefs of the TEAM France (Bernard Leprince, Fabrice Prochasson, François Adamski)  to exchange ideas and show once more their support to Laurent Lemal, while highlighting also the important role played by the partners such as qu’Enodis, Metro, Elle & Vire Professionnel, Boiron, Rougié and many more.

Team France Bocuse d’Or is a real logistics partner” explained Laurent Lemal, accompanied by his official coach Franck Putelat and by his commis chef Léa Fageol.

It enables me to keep my mind focused only on the competition. I am not hunting for parnters, and that, is a real comfort”. Regarding the preparation to the Bocuse d’Or, the chef says that he is in a reflection period “I am thinking about the universe of the dishes and plates, but I also need to be committed to the restaurant (La Coopérative in Balesta, in the South-West of France).

The next step is the Bocuse d’Or Europe in May 2016. The first 11 nations will qualify for the Bocuse d’Or final that will be held in Lyon in January 2017.

The themes “meat” and “fish” were announced this week by GL EVENTS :

-       Fish : Russian sturgeon and Caviar

-       Meat : Young Hungarian red deer

The themes and sourcing of product is not easy, however, Laurent Lemal does not let himself worked up by worked up by the challenge “you really have to be creative and keep focused. But I am good at working under pressure, so I do not loose time and I focus on what’s important”.
