Sirha 2017 is over !

 

Back on the highlights of this 2017 edition, full of emotions and sharingmoments. Events, backstages, contests, all the ingredients were brought together to make you live a spectacular week. Major competitions have taken place, especially the Coupe de France de Boulangerie, the World Pastry Cup and of course the Bocuse d'Or.

 

On Sunday and on Monday, 22 international teams competed for the World Pastry Cup. Each team was represented by a glacier, a pastry chef and a chocolatier. They had 10 hours to perform four trials: a chocolate entremets, a fruit iced entremets, a sugar sculpture and an individual cake. All our congratulations to the French team : Etienne Leroy, Bastien Girard and Jean-Thomas Schneider, who won the World Pastry Cup. Congratulations also to teams of Japan and Switzerland, respectively on the second and third step of the podium. The creation of the sugar piece of the French team, on a Rock'n Roll theme, left a lasting memory to the jury.

 

On Tuesday and Wednesday, 24 countries participated in more than intense trials for this 30th edition of the Bocuse d'Or. This year, chefs took part creatively for 5h35 on two trials: a "Bresse Chicken with Crustaceans" to present on tray with accompaniments and a "100% vegetable plate" to highlight vegetables. The United States won the Bocuse d'Or! Congratulations to chef Mathew Peters, his commis Harrison Turone and their renowned coach 3-star chef Thomas Keller. Chef Christopher William Davidsen from Norway and Chief Viktor Andrésson from Iceland received the Silver Bocuse and the Bronze Bocuse. These three winners will also join the prestigious "Bocuse d'Or Winners" association. France finished fifth of the rankings. We congratulate Chef Laurent Lemal who won the special prize for 100% vegetal plate, and Benjamin Vakanas, who was rewarded the Best Commis Award in 2017.
