Take the butter out of the refrigerator to soften.
Mix the flour, salt, and sugar. Add the egg yolk, then the butter and stir into the flour, kneading quickly and lightly with your fingertips until you get some kind of coarse semolina.
Add the water, gradually. It takes very little to allow the dough to bind and make a ball.
Roll out the batter and top with a pie pan (buttered). Prick with a fork. Spread the apricot jelly.
Prepare the "flowers". Wash and wipe the apples.
Peel for the first time around the apple. Do not keep it. Then make a second peel on the trace of the first: we obtain long peels with an edge of 1 to 2 mm of skin. Wrap them up into pretty flower buds.
