The wish of Dutch Chef Gert Jan Hageman was to express his creativity honouring what each season has to offer while respecting nature. 


In 1993, two years after getting a Michelin star at the Vermeer restaurant (Amsterdam, Pays-Bas), he has the idea to transform a 1926 greenhouse at risk of demolition into a restaurant and garden centre. After a few years of building works, De Kas opens its doors in 2001.


Bathed in sunlight thanks to its gorgeous glass roof, the restaurant is nestled at the heart of Frankendael Park, between the Rembrandt Tower and the Watergraafsmeer.


The Chef grows his own vegetables, herbs, and edible flowers in the botanic garden of the restaurant and the adjoining greenhouses. He evens owns a field in the region of Beemster. As for the rest, the restaurant gets its supplies from a network of small local producers for the sake of traceability. 


Chef Gert Jan Hageman’s cooking reflects his love for beautiful products. Each day, De Kas has a different menu with Mediterranean influences. Vegetables – at the heart of recipes – are cooked in a simple manner and merely spiced with herbs or spices. They come with meat or fish bought from direct channels. Among the signature dishes, a delicious Oven cooked duck and its mashed potatoes and leeks with roasted green beans and yellow carrots. On the basis of its global environmental commitment and its exceptional setting, De Kas – now renowned beyond frontiers – contributes to making Amsterdam one of the newest gastronomic capitals of Europe!
