Recipe Strawberry Mojito Cheese Cake

100 g Graham Cracker or Shortbread Biscuit Crushed into Powder
50 g butter, melted
450 g Cream Cheese Crème Elle & Vire Professionnel®
150 g icing sugar
1 teaspoon vanilla extract
2 teaspoon lemon juice
75 g Mascarpone
350 ml Excellence whipping cream 35% fat
1 pièce Tonka beans
1 vanilla pods
QS vanilla extract
1 lime juice
75 g strawberries
25 g mojito puree

The recipe,

    Method

    Place cream cheese in a large bowl and, using an electric mixer, beat until smooth and creamy.

    Add icing sugar and stir until combined.

    Stir in vanilla extract and lemon juice, pausing to scrape down the sides and bottom of the bowl.  

    Add coconut cream and stir well.  

    Pour heavy cream into a separate, medium-sized bowl (preferably a chilled metal bowl).  Whisk on high speed (preferably using an electric mixer) until stiff peaks are achieved.

    Fold your whipped cream into cream cheese mixture until smooth and well-combined.  

    Mix the crackers into powder and add the melting butter and blend again a little more.

    Spread your crackers mixture in the bottom or your pastry ring or pan.

    Spread cheesecake mixture evenly over prepared graham cracker crust.  

    Cover and refrigerate at least 4 hours or overnight.  

    Top with fresh Raspberry and berries

    Finish it up with grated lime zest on top
