150 g red onions
175 g red wine vinegar
75 g balsamic vinegar
100 g brown sugar
10 g pepper

10 burger buns
500 g Original american cream cheese 34% fat
10 tranches slices raclette cheese
100 g pickles
10 leaves lettuce leaves
Fine "fleur de sel" sea salt and pepper
10 beefburgers
50 g whole milk
50 g Excellence whipping cream 35% fat
Chicory and little gem lettuce “fries”
5 gem lettuces
5 chicories
Vinaigrette
20 g mustard
80 g olive oil
50 g balsamic vinegar
salt and pepper
Presentation
chives
pickles
Fine "fleur de sel" sea salt and pepper

The recipe,
step by step

    Onion pickle

    Peel and thinly slice the onions.
    In a saucepan, combine the red wine vinegar, balsamic vinegar, unrefined cane sugar and pepper. Add the onions and cook for 6 minutes.

    Burger

    Soften the cream cheese with the milk and the cream then combine withthe chopped pickle. Season.

    Toast the burger buns. Cook the beefburgers the length of time required. Add a slice of raclette cheese on top of the beefburger. Brown under a salamander.

    Pipe the cream cheese onto the burger bun. Add 2 to 3 pickle slices, a lettuce leaf and then the beefburger. Top with the remaining half of burger bun.

    Chef's tip

    Vegetarian: For a vegetarian burger, replace the beef with a vegetable cake

    Chicory and little gem lettuce “fries”

    Wash the chicory and little gem lettuces. Cut into long sticks.

    Vinaigrette

    Combine the mustard, vinegar, salt and pepper. Add the olive oil and mix

    Presentation

    Position the burger on a board. Pour the vinaigrette into a small bowl. Place the chicory and little gem lettuce sticks into a small bucket. Add finely chopped chives, and a little onion pickle to the salad sticks, season.
