Flashback on a unique pastry demonstration in Romania

Last November, over 200 chefs had the chance to attend a pastry demonstration at the Sheraton Hotel in Bucharest. It was carried out by a partner chef, Best Pastry Craftsman 2019, Patrice Ibarboure. He currently works in the family-run restaurant, Les frères Ibarboure, in Bidart with his brother Xabi.

For a whole day, he recreated 3 of the recipes he made for the title of Best Pastry Craftsman competition :

  • The Granny-Smith Apple
  • The Crunchy Beehive with chestnut honey, mascarpone mousse and pecan nut, milk emulsion and a hint of citrus fruit
  • His signature entremet with exotic coconut flavours, mango, passion fruit and pineapple

 

He also shared anecdotes and valuable organisation advice for this competition as well as tips for an optimal use of Elle & Vire Professionnel® products.

 

This demonstration was also followed by a pastry workshop with 14 chefs at Stephane Glacier's School, himself Best Pastry Craftsman 2000. The participants had a wonderful moment of exchange with the chef and also discovered 5 recipes:

  • The Chocolate Spiral, peanut croustillant
  • The Opera
  • The Chocolate tart
  • The pineapple Entremet, agastache and ginger
  • The Apple-Vanilla Puff pastry

 

To make these recipes, the chef used 2 Elle & Vire top products: Extra-Dry Butter 84% fat and Excellence Whipping Cream 35% fat.
