Bocuse d’Or 2021: a competition always in motion

Bocuse d’Or 2021

24 Chefs from around the globe, will compete for 2 days, mixing technical skills and creativity. Davy Tissot (@davytissot), the French candidate, who gave us the honour of sharing his preparation on the Elle & Vire Professional®  (@elleetvirepro) Instagram page, will be among the finalists.

The news came on March 25th! The Bocuse d’Or International committee once again adapted the competition to gastronomic trends. In 2017 and 2019 the guidelines evolved towards more naturality; candidates had to realise 100% vegan recipes. In 2021 candidates will have to take up new challenges. A strong signal that shows that the Bocuse d’Or remains the biggest culinary competition worldwide and that it is always in motion.

The legendary tray theme will be the chuck steak, and not just any steak, the Label Rouge beef. Each candidate will have his unique tray offered by De Buyer, a partner of the competition.

For this 18th edition, organizers decided to evolve the traditional “Plate” trial and chose to put the spotlight on takeaway services, “to echo the new catering ways that rose during the pandemic”.

Candidates will have to come up with a takeaway menu around three courses (starter, dish and dessert) around the same seasonal product, tomato. The menu will have to be presented in a box developed by the candidates themselves, made with organic and reusable materials.

This new trial is a real challenge for Chefs but also a wink to Chefs around the world that had to adapt their cooking to takeaway versions.

A strong renewal signal?

The Bocuse d’Or 2021 also created the Bocuse d’Or Social Commitment Award, a nice tribute to the less fortunate.

This trial will reward a team for their support throughout the preparation through their solidarity commitment: food aid, meals delivery, fight against food waste…

More than ever the Bocuse d’Or tries to inspire tomorrow’s food service, on subjects that are inevitable today: environment and solidarity.
