Meet Florian Puget

Pastry Chef
Based in New Caledonia, Florian Puget runs the "Pêcher Mignon" pastry shop in Nouméa. A passionate pastry chef, he has joined us as an Elle & Vire Professionnel® Ambassadeur.
His guilty pleasure
Without a doubt, tiramisu. Its unique combination of flavors and textures transports me with every bite. And what's more, I love Italy, its culture and gastronomy.
The desserts that marked his childhood
Nothing can match the freshness and simplicity of homemade desserts made with fruit picked straight from the tree.
His career path
I have acquired a solid background in pastry-making. I obtained a CAP in pastry-making, a mention complémentaire in pastry-making and confectionery, and a BTM in pastry-making, chocolate-making, confectionery and catering. My studies took place in France, in the magnificent Rhône-Alpes region.

I also had the opportunity to broaden my horizons by working as a pastry chef in a Michelin-starred restaurant in Belgium for two years. This experience enabled me to hone my skills and explore new techniques and flavours.

Finally, I'm now based in Nouméa, where I've had the pleasure of opening my own pastry shop, "Au Péché Mignon". It's a project that's particularly close to my heart, as it allows me to share my passion for pastry with the people of this beautiful city.

My favorite products are Crème Excellence, Tourage Butter and Cooking Cream Sour Taste. Crème Excellence is a must in pastry-making, thanks to its creamy texture and high fat content. The tourage butter, meanwhile, is incomparable in terms of taste and quality, ideal for crisp puff pastries. Finally, Cooking Cream Sour Taste adds a subtle touch of acidity and a velvety texture to my creations, which I particularly appreciate.
