1 kg Mascarpone
333 g Excellence whipping cream 35% fat
275 g egg yolks
250 g sugar
150 g water

step by step

    Prepare

    Pour the mascarpone into a bowl and set aside.

    Mixture 1 : make a pâte à bombe. Cook the sugar at 118°C with the water and pour it over the egg whites and egg yolks whilst whisking.

    Mixture 2 : whip the cream.

    Mix

    Combine the two mixtures, and incorporate them directly into the mascarpone. Mix it all together until it reaches.

    Dress the dish according to your inspiration.
