Mix
1 kg Mascarpone
1 kg Excellence whipping cream 35% fat
500 g eggs
290 g sugar

    Start

    Weigh out your ingredients. The use of pasteurised eggs is preferred.

    Mix

    Using a food mixer, mix together all the ingredients until you get a consistent mixture (10 to 20 minutes).

    The Elle & Vire Professionnel® Mascarpone, with its semi-thick texture, does not need to be loosened beforehand.
