Located close to the historic heart of the city, Brasserie 1893 is one of the restaurants of the Waldorf Astoria hotel in Beijing. In the tradition of the great Parisian brasseries and restaurants that flourished in the French seaside resorts at the beginning of the 20th century, the restaurant embodies the French art of living. The refined atmosphere combines oriental tradition and modern luxury to provide an intimate setting. Equipped with two magnificent Molteni stoves, the open kitchen creates an authentic stage and gives clients the chance to admire the work of the kitchen staff.

The menu gives pride of place to daring French cuisine imbued with Asian influences. Even the name of the establishment is a bridge between cultures. "Brasserie” asserts French heritage while “1893” recalls the year that the first Waldorf Astoria opened in New York and Chef Addison Liew, trained alongside the greatest French Chefs (the Pourcel brothers, Pierre Gagnaire, Joël Robuchon and Guillaume Galliot), brilliantly combining French culinary know-how, the tastes and flavours of his homeland (Malaysia) and Japanese style that can be seen in the exquisite way the food is presented. Carefully sourced, seasonal local ingredients mix with the most emblematic products of French gastronomy such as foie gras, white asparagus and cheese.

Between East and West, the restaurant celebrates classics such as the must-have Eggs Benedict and the famous Waldorf Salad, created in 1896 by Oscar Tschirky, the historic maître d'hôtel of the Waldorf Hotel, alongside very contemporary fusion cuisine. Who could resist the creamy artichoke velouté with Comté toast, the deliciously tender braised beef cheek in bordelaise sauce or the plaice in minestrone sauce? As for desserts, the black sesame soufflé with soy bean ice cream and whitechocolate sauce is worth going out of your way for!
