The boom of the beverage chains, the development of virtual restaurants bringing the gastronomic experience to the home or office (such as Project P in Dubai or the Grain restaurant in Singapore), the enthusiasm for hybrid spaces… The new modes of consumption have stimulated a genuine renewal of the sector. Whereas the opening of the Armani Caffè & Ristorante on the first floor of the eponymous fashion store on Paris’ Boulevard Saint Germain had created a storm back in 1998, establishments combining a restaurant with, for example, the sale of books (such as Chicago's Read it and Eat, which opened in 2015), flowers (such as New York's La Mercerie), culinary products (L’Argot, a butchery-restaurant in Lyon) or which showcase the works of artists, are legion twenty years later. These spaces, designed for sharing, promise new experiences!
