Fontainebleau siphon
Melt the hydrated gelatine and trickle over the cream whilst whisking, then add all the other ingredients together. Pour into a siphon. Gas with 2 cartridges without shaking too much.

Strawberry marmalade
Cook the strawberries with the sugar and the ground pepper. Leave to simmer, then add the sugar/pectin mixture, the 15 g of lemon juice with the 30 ml of wine infusion. Boil for 1 minute, add the hydrated gelatine and remove.

Strawberry ice cream
Boil the whole milk with the milk powder, sugar, stab and spray-dried glucose powder.
Add the cream to the mixed strawberries when cool.
Leave to mature for 24 hours and then blend in a food processor.

Strawberry juice
Cook the strawberries with the sugar in a sous-vide bag in a steam oven at 100°C (212°F) for two hours.

Strawberry juice with elderflower
Boil the strawberry juice that has been previously infused with elderflower (1 hour) with the starch when cooled.

Strawberries marinated with vanilla sugar
Sprinkle the strawberry slices with vanilla sugar right before serving and before assembly.

Lemon shortbread
Rub all of the ingredients together. Roll out to 4 mm and cut to 5 cm in diameter.

Meringue tube
Make a Swiss meringue at 55/60°C (130/140°F), use when warm with a brush and coat tubes that are 2 cm in diameter, which have been covered with plastic sheets (50 x 6.5cm) and taped. Dry out in a Rational oven at 60°C (140°F) for 4 hours.

Infusion au vin
Réduire le vin de moitié, ajouter le jus de griotte et le jus de citron et faire infuser toutes les épices 30 minutes.
Chinoiser.

Appareil tarte au vin
Dissoudre la masse gélatine avec la moitié de l’infusion, faire bouillir, verser sur l’autre moitié d’infusion et terminer par les jaunes d’œufs.
Cuisson 25 min à 90°C 100% humidité, ventilation3.

Crème d’amande
Mélanger le beurre pommade, la poudre d’amande, le sucre glace sans crémer, les zestes et la poudre de cardamome noire.
Ajouter les œufs tempérés.

Pâte sablée amande
(500 g de pâte /feuille de 2 mm)
A la feuille, ramollir le beurre avec le sucre, rajouter la poudre d’amande, puis les œufs tempérés sans émulsionner. Rajouter le rester et mélanger sans trop travailler puis réserver au frais.
Etaler très froid a 2 mm d’épaisseur, foncer des cercles inox perforées de 7 cm de diamètre, faire prendre au froid puis cuire à blanc à 150°C. Une fois froid, dorer légèrement intérieur et extérieur et repasser au four 3 minutes.

Jus de griotte
Cuire en sac sous vide les griottes billes et le sucre à 80°C au four vapeur pendant 1 heure environ. Egoutter les griottes au torchon.

Nappage griotte
Bouillir le jus de griotte avec la pectine et le sucre.

Assembly and decoration
In a baking ring that is 5 cm in diameter, pipe the strawberry marmalade and place three slices of strawberries marinated in vanilla sugar, juniper
shavings, then place the meringue on top.
Arrange fresh strawberries cut into quarters, halves, slices and whole strawberries sweetened with hint of vanilla and lightly seasoned with Malabar pepper.
Place a ball of strawberry ice cream in the centre and siphon the fontainebleau on top. Strew with 4 to 5 broken tubes of meringue, some Sakura Cress® and Atsina Cress®.
