A quenelle of chantilly

The quenelle of cream (or ice cream) is a refined presentation used by professionals. This is a handmade decoration using two spoons.

To use this technique

Elle & Vire products used
Whipping Cream
Necessary utensils
Deux cuillères

Chef's technique step by step

  1. 1

    Make your chantilly by following the Elle & Vire tips (see the “How to make Chantilly” guide).

    Place two well-rounded soupspoons in warm water 

    Chef's tip

    Ensuring that the water is not too hot.

  3. 3

    Take a large amount of chantilly in the first spoon (the bottom of the spoon smoothes the chantilly).

  4. 4

    Take the second spoon and smooth off the other side of the chantilly by tipping it into the second spoon (this will smooth one side).

  5. 5

    Put the first spoon back into the warm water and repeat the procedure to smooth off the final side.

    The quicker the movements, the better the result.

    The quenelle of chantilly should be placed either on top of the dessert or beside it on the plate.

    This technique can also be used with ice cream.
