As we announced at the beginning of the year, 2014 has been packed with great new product innovations. We have developed three new product references to add to our range of creams: Sublime, Cream with Mascarpone, which is the subject of an article in this issue; Performance Universal Cream 35.1% fat, a multi-purpose cream
with a coating consistency, used both in cooking and baking, ideal for cooking and food decoration, and the Advantage Whipping Cream 30% fat, presenting a very good price-quality ratio. To best meet your needs, we offer the Performance Universal Cream 35.1% fat and and the Advantage Whipping Cream in a new 2-litre format. Lastly, perhaps you have
already seen our new packaging designs (rolled out in late 2014, and in early 2015): the packaging for the Excellence Whipping Cream 35.1% fat, Excellence Cooking Cream 35.1% fat and the Advantage Cooking 15% fat has been fully redesigned, giving it a touch of elegance and modernity.
After several years of research, Elle & Vire Professionnel® is proud to present its new product, Sublime, Cream with Mascarpone—a name that couldn’t be more apt! Made with 70% Excellence Whipping Cream 35.1% fat and 30% mascarpone, this cream will quickly become one of your "must-use" products. is the theatre for the prestigious Bocuse d’Or (of which Elle & Vire Professionnel® is a partner) and The World Pastry Cup cooking competitions. The greatest international Chefs compete to produce the boldest, most creative and most meticulously designed dishes and to win the precious
