After a career change, Myriam founded the ‘Maison Aleph’ in Paris in 2017, combining flavours of the Orient and French savoir-faire.
François Daubinet
Executive Pastry Chef at the Maison Fauchon since 2017. A Compagnon du Devoir in pastry, he was a pastry chef at the Michelin-starred restaurant Taillevent in Paris, has worked in prestigious establishments and took part in the opening of Christophe Michalak’s Master Class.
Why this partnership?
MS : François allowed me to bring Middle Eastern pastry into a totally contemporary world while sharing with me all his knowledge about French pastry-making and production experience.
FD : Making the most of my experience in Myriam’s project has been a real revelation in my professional life. Being able to draw inspiration from another culture and work with new products has been a real pleasure.
Talk to us about this recipe for four hands
MS : The recipe is an adaptation of one of the signature products at Masion Aleph, made with an angel hair base that is traditionally cooked in clarified butter and caramelised with syrup, which gives it its crunchy texture and lightness. We discovered this unusual but delicious combination of lemon and cardamom and we adapted it into a tart.
