From commis chef to sous-chef, Jonathan worked alongside Michael for more than eight years.

Originally from Lorraine and born into a family of restaurateurs, Michael Bartocetti did his training at Fischer, Guy Savoy, Alain Ducasse and at the Plaza Athénée.

2018 Vice-Champion of the Championnat de France du Dessert and Pastry Sous-Chef at the Shangri-La Hôtel.
What are your links with passing knowledge on?
MB : When creating a dessert, I don’t insist on anything, it is always an exchange of ideas. With Jonathan, I have refined my palate and dish presentation. We don’t do anything alone.
JC : He was my mentor and I learned everything at his side: He taught me to taste, season and perfect the product without letting it lose its essence.
Where did the idea for this recipe for four hands come from?
MB : The underlying approach was to make a simple dessert: strawberries in wine. The flavours are brought up-to-date by playing around with textures, with real precision in the selection of products and seasoning.
JC : We found this very simple way of enjoying strawberries, a French classic, with wine, sugar, cream and the slight crunch of meringue.
