Winner of the Championnat de France du Dessert en 2017, instructor at the CFA Médéric in Paris for the Mention Complémentaire en Dessert de Restaurant (a diploma focusing on dessert-making).
Vincent Cabel
A graduate of the CFA Médéric in Paris and pastry commis chef at the Shangri-La Hôtel. 2017 ViceChampion of the Championnat de France du Dessert.
What are your links with passing knowledge on?
CG : Vincent is a highly-motivated person, which makes you want to pass it on. He pushes you to question yourself, to be able to go even further and teach him even more. Passing on knowledge also helps you develop!
VC : When I asked to take part in the Championnat de France for students of the Mention Complémentaire en Dessert de Restaurants, Cyril accepted straight away. He generously and tirelessly showed me all the fundamentals of patisserie.
A few words about this experience for four hands
CG : When working, we no longer need to discuss everything, it is alchemy. The inspiration comes from our respective trips to Japan: integrating cherries into a typically French product.
VC : Cyril conveyed his vision, I provided other ideas: we put it all together and created he recipe around that.

Cherry Blossom

In the beginning the recipe presented the Burlat and Morello cherries in the form of a flowering cherry tree. Then on a trip to Japan, the discovery of kinako completed this dessert while adding volume.
