1 kg Mascarpone
333 g Excellence whipping cream 35% fat
266 g egg white
200 g egg yolks
200 g sugar

step by step

    Prepare

    Mixture 1 : mix the mascarpone with the cream and then add the egg yolks. Whisk it all together in a food mixer.

    Mixture 2 : make a meringue by beating the egg whites with the sugar until soft peaks form.

    The Elle & Vire Professionnel® Mascarpone, with its semi-thick texture, does not need to be loosened beforehand.

    Mix

    Fold the meringue into the mascarpone mix .
