Recipe Chocolate, Vanilla, Pistachio, and Blackcurrant Diamonds

300 g Elle & Vire all Purpose butter 82% fat
2 g fine salt
60 g whole eggs
160 g icing sugar
5 g vanilla sugar
400 g flour
coloured granulated sugar

    Preparation

    For chocolate diamonds: take out 30 g of flour and add 50 g of cocoa powder.

    For pistachio diamonds: add 50 g of pistachio paste and a few drops of natural green food colouring.

    For blackcurrant diamonds: add 60 g of blackcurrant pulp, 50 g of flour and a few drops of natural food colouring.

    Dissolve the salt into the eggs. Mix the butter with the sugars. incorporate the eggs and 1/3 of the flour, knead until soft dough is formed. add remaining flour.

    For pistachio and blackberry diamonds, add the flavouring and the natural food colouring with the butter and sugars. For chocolate diamonds, add the cocoa. refrigerate for 30 minutes, then separate dough into 300 g sections and form into rolls 3 cm in diameter and 50 cm long. refrigerate, brush with egg yolk and roll in sugar. Cut out rounds 1 cm thick, place on sheet. Bake at 160°c / 320°F for 12 to 15 min. cool immediately on cooling rack. Best if kept in airtight container with anti-humidity packet.
