In pastry making

Chantilly, whipped entremets, mousses...

Cream must be whipped to make Chantilly, mousseline cream, Bavarian cream, or savoury whipped cream. To make whipped cream, the cream must have a minimum fat content of 30%.
The whipping rate, hold, and how easily it can be blended, all depend on the technical qualities of the cream.
