Throwback to two exceptional workshops with Clément Nadeau in Jakarta!
From 9th to 11th August 2017, Clément Nadeau, Pastry Chef at La Maison de la Crème Elle & Vire, was in Indonesia for two exceptional workshops. For four days, the Chef created sweet pastry recipes with teams from Bakerzin Jakarta and from Mandarin Oriental Jakarta.
First, Clément Nadeau worked with Chef Yusup from pastry shops Bakerzin Jakarta. They created two recipes for the 9 shops of BOGA group: “Dôme de Pomme” and “Fenouille Choux”. These new recipes are featured in the campaign “Rustic Sweet”.
Then, Clément Nadeau and Pastry Chef Remi Martinazzo from Mandarin Oriental Jakarta created the “Independence Day Swiss Roll” celebrating Indonesia 72nd Independence Day. They also created a variation of the “Cheesecake Riviera”* with passion fruit flavor.
The workshops were a good opportunity for both pastry teams to discover Sublime Cream with Mascarpone and to enjoy advices from Clément Nadeau for it use in pastry recipes.
Those two workshops were a complete success as the four newly created recipes received a great welcome from the audiences – among which were food bloggers and journalists – who attended their presentations. The audiences particularly enjoyed and admired the creativity of the recipes created hand in hand first with Chef Yusup and then with Chef Remi Martinazzo.
