Our Chef was in Mexico to carry out demonstrations and workshops
In the beginning of March, our Chef Ludovic Chesnay of La Maison de la Crème Elle & Vire® was on tour in Mexico.
On the agenda: demonstrations and workshops about “small cakes” recipes, viennoiseries and new culinary trends. In a support approach, our Chef realized creations mixing fruits and vegetables, such as the Cucumber & Orange Dome or the Pumpkin & Orange Millefeuille.
But Ludovic Chesnay also shown how to use puff pastry differently than classic viennoiseries, while respecting food cost: for instance, how to use the dough remnant ingeniously so as not to waste anything.
