Meet Toni Vera

Toni Vera is Pastry Chef and Ambassadeur for Elle & Vire Professionnel in Spain. He is responsible for viennoiserie at Canal Pastry Shop in Barcelona and has won Spain's best croissant award three times, in 2016, 2019 and 2022.

He arrived in the world of patisserie... by chance! While studying chemistry, he started dating a young woman whose parents were pastry Chefs. In the afternoons, he would help out in the family patisserie "Forn Bertran", testing recipes, combining ingredients and playing with proportions. He soon realised that he preferred to make preparations with flour, sugar and butter rather than with chemical components. One thing leading to another, he abandoned his chemistry studies and spent 5 years working in the family patisserie, making viennoiseries, cakes, individual desserts...

He then went on to work in other emblematic Barcelona patisseries, such as Bubó, Comas and finally Canal, where he still is employed today. He also teaches at the Barcelona Bakery Association.

After long dreaming of winning the award for Spain's best croissant, his dream came true in 2016, and his tireless efforts have now earned him 3 such titles. He explains that he owes his victories to "perseverance, dedication, waking up at 5 a.m. on weekends and public holidays...". According to him, "succeeding in making the best croissant is a question of perfectionism, but also of the quality of the ingredients. You have to work on the recipe every day to try and improve it."

He has been an Elle & Vire Professionnel Ambassadeur in Spain and, in his words, "for me this represents great pride and responsibility, as it means that I represent the image of the best dairy brand in Spain. Elle & Vire Professionnel products are of the highest quality, and they make it possible to create finished products that really stand out."
