Gianluca Fusto is like his pastry: constantly evolving, in a universe where the ingredient is at the center of everything. Since he was very young, he has embarked on a journey into the infinitive mazes of taste, that led him to become a real reference in the world of modern international pastry: a contemporary alchemist who plays with ingredients, textures and temperatures to give unique sensations to the palate, always under the banner of aesthetic and structural minimalism.

After great experiences in Italy and all over the world (from Middle East to China, from United States to Japan), Gianluca Fusto Consulting, a consulting, analysis, high-level training and courses structure aimed at all the food industry sectors, was established in 2008.
In 2013 enters Linda Massignan, partner of Fusto, who brings her experience in management, communication and event organization. This is how FUSTO Milano takes off: in 2020, the opening of the first Atelier with adjoining Pastry School in the center of Milan, and the development of the pastry and chocolate brand FUSTO Milano.
Due to the outbreak of Covid-19, Pastry Chef Gianluca Fusto and Linda Massignan decided to focus on their workshop as a new concept in the pastry industry: a “secret” boutique lab dedicated to the study, production and sale (online, take away and delivery) of their “Contemporary Artisanal Pastry and Chocolaterie”. This innovative project, based on the excellence of raw materials, avant-garde design and extreme customization in their approach to customers, has won numerous prestigious awards, such as the “Most Innovative Format of the Year 2021” and the “Three Cakes” from the Gambero Rosso Guide to the Best Pastry Chefs & Pastry Shops in Italy 2021 and “Entrepreneurs of the Year 2021” at the FoodCommunity Awards, and significant international media coverage (print and online).
Gianluca Fusto has been collaborating for several years with Elle & Vire Professionnel®, and is now part of the large family of Brand Ambassadeurs.
