Recipe Rose-scented Cream Cheese & Mung Bean Cake

500 g mung bean paste
100 g Elle & Vire all Purpose butter 82% fat
Cream Cheese filling
12 g Excellence whipping cream 35% fat
12 g rose jam
76 g French cream cheese

step by step

    Mung bean exterior

    • Beat the mung bean paste in a bowl until smooth.
    • Add the butter and combine to obtain a homogenous mixture.
    • Set aside.

    Cream Cheese filling

    • Stir all the ingredients together until evenly mixed, then add to a piping bag for later use.
  3. 3

    Assembly

    • Mung bean mixture 30 g / cream cheese filling 5 g:
    • Wrap the mung bean mixture around the cream cheese filling, place in a mung bean cake mould and press lightly.
    • Leave the pressed mung bean cakes in the refrigerator to set.
