Fragment: when Art meets Pastry

We gave you an appointment on the Elle & Vire Professionnel® Instagram account on Thursday, December 10, 2020 to present and discuss about the last two creations of François Daubinet, Elle & Vire Professionnel® Ambassadors, who at 32, is the executive pastry Chef of the famous and iconic Fauchon Paris house.

The live took place in the cozy setting of Escargot 1903 in Puteaux, restaurant of one of our Ambassadors, Yannick Tranchant.

It was in family mood that Nicolas Boussin and François were able to discuss about the latest news and inspirations.

François Daubinet gave us the pleasure of sharing his latest two creations: Fragment and the Truffle.

Focus on the history of Fragment:

It is the meeting between pastry Chef François Daubinet & the visual artist Hopare, revealing their sensibilities in this quest of sharing.

The meeting was born out of François’s crush on the works of Hopare during an exhibition in Paris which will initiate the collaboration.

The association of these two artists emerges in all aspects of this project.

A limited-edition box set, numbered 750 copies, with surgical details illustrating the world of Hopare!

Inside, this block of pleasure really takes up the codes of sculpture, another discipline dear to François. "A creation entirely carved by hand, which is like a fragment of a wall that stands out from a work of Hopare," explains François.

You will understand, this project goes far beyond each other's universe to surpass itself and create a full sensorial experience.

When it comes to taste and not the least, "an airy and slightly sweet chocolate mousse, roasted peanuts at the base. The crunch is underlined by the crunchy peanut praline, as well as a soft roasted peanut. This is completed with the creaminess of caramel and its creme brulee with vanilla and tonka bean, "describes François Daubinet.
