    Preparation of the apricots

    Wash the apricots and cut them in half. Melt the butter in the frying pan and add the apricots and a tablespoon of liquid honey. Roast the apricots a few minutes on each side. Let cool.

    Preparation of the chantilly vanilla cream

    Take a very cold bowl (put it in the refrigerator half an hour before). Pour the cream very cold. Whisk cream with electric mixer (maximum speed). When the cream begins to thicken, add the sugars. Continue to whisk until the cream is very firm.

    Dressing of the apricots

    Arrange the apricots on each dish. Using a pastry bag, make a dome on each apricot. Decorate with mint leaves. Enjoy.
