Preparation of the brioche dough
200 g
320 g flour
4 eggs
8 g salt
3 tbsp caster sugar
15 g fresh yeast
Preparation of salted butter caramel
200 g sugar
100 g
1 tbsp water
15 cl
1 tbsp honey

step by step

    Preparation of the brioche dough

    Place the yeast in the mixer bowl, in this order, add: flour, salt, sugar and eggs. Mix together until a homogeneous paste is obtained. Form a ball. Add butter cut into pieces and knead again. Place the ball of dough in a bowl covered with a towel, let rise 1h30.

    Cooking the brioche

    Preheat oven to 180 ° C. Butter a cake pan. Shape the dough ball along and arrange it in the pan. Leave to rise 45 minutes then bake 35 minutes.

    Preparation of salted butter caramel

     

    Dice the salted butter.

    Place the sugar in a saucepan with 1 tablespoon of water, mix. Heat the sugar without stirring until you get an amber caramel.

    Remove from heat and add delicately the cream and then mix thoroughly. Gradually add the salted butter and the honey spoon. Mix well.
    Let cool and enjoy with the brioche.
